Easy Pickled Onions

You will need:

  • small onions1 pound of small onions or shallots
  • white vinegar2 cups of white vinegar
  • water1 cup of water
  • table salt1 tablespoon of salt
  • sugar2 tablespoons of sugar
  • garlic cloves2 cloves of garlic
  • black peppercorns1 teaspoon of black peppercorns
  • mustard seeds1 teaspoon of mustard seeds
  • glass jar with lid1 glass jar with a lid

Instructions

  1. First, peel the onions or shallots. This can be done easily by making a small cut at the top and bottom of each onion and then peeling off the skin.
  2. Next, combine the vinegar, water, salt, and sugar in a medium-sized saucepan. Stir until the salt and sugar are completely dissolved.
  3. Bring the vinegar mixture to a boil over medium-high heat. This will help to fully dissolve the salt and sugar and to create a strong pickling solution.
  4. Once boiling, add the peeled onions to the saucepan. Let them cook in the boiling mixture for about 2 minutes. This will help to soften the onions and allow them to absorb the pickling solution.
  5. After 2 minutes, remove the saucepan from the heat. Let it cool for a moment.
  6. While the onions are cooling, add the garlic cloves, black peppercorns, and mustard seeds to your glass jar. These will add extra flavor to your pickled onions.
  7. Then, carefully pour the onions and the vinegar mixture into the jar, making sure to cover the onions completely with the liquid.
  8. Finally, seal the jar tightly with its lid. Let the jar cool to room temperature before placing it in the refrigerator. The onions will need at least 24 hours to fully pickle, but they will be even more flavorful if you can wait a week before eating them.
